I have some magic to share with you—one-pan dinners!
They’re easy, quick to make, and best of all, there’s barely any cleanup.
Let’s dive into seven delicious one-pan meals that will save your evenings and make your taste buds happy.

1. Sheet Pan Chicken and Veggies
I am a vegetarian so I will try and add alternatives too.
This is a classic that never fails!
Just throw some chicken breasts or thighs on a baking sheet.
Alternatively, use Quorn pieces or tofu.
Add your favourite veggies. Like carrots, broccoli, and potatoes.
Sprinkle with olive oil, salt, and pepper, and bake at 400°F/200c for 25-30 minutes.
Voila!
Dinner is ready, and you’ve only used one pan.
You can also try this Chicken Chasseur meal.
2. One-Pot Spaghetti
My absolute favourite thing is pasta!
Love spaghetti but hate the mess?
This one’s for you!
In a big pan, add spaghetti, tomato sauce, water, and your favourite seasonings like garlic and mixed herbs.
Cook it all together until the pasta is soft and the sauce is thick.
You can even toss in some cooked meatballs (or vegan meatballs) for extra yumminess.
3. Easy Stir-Fry
As a kid, I hated stir fry.
My girls love it as long as I adapt it for them.
Kids often have stronger and more tastebuds than adults. It’s fine to remove sauces or change noodles to rice to suit the family.
Stir-fries are super fun and full of flavour.
In a large pan. Stir fry pans are easy to come by and come in lots of different sizes.
Cook strips of chicken or beef. Change to Meat-free if needed.
Add mixed veggies like bell peppers, carrots, and snap peas.
Add a simple sauce made of soy sauce, honey, and garlic.
You can also buy ready-made sauce bottles for convenience.
Serve over rice or noodles if you want—but even by itself, it’s a winner!
4. Taco's
Tacos are always a hit!
There are lots of ways to do this dish.
One is, to cook ground beef or turkey in a skillet and mix in taco seasoning, black beans, corn, and diced tomatoes.
For a meat-free version, add pieces or lots of mixed beans and tofu to the seasoning.
You could also buy a kit but it works out a little more expensive.
Top with grated cheese and let it melt.
Scoop it up with tortilla crisps or wrap it in a warm tortilla for a quick taco night.
This meal works great with a family fun night.
5. One-Pan Chickpea and Spinach Curry
Craving something hearty and meat-free?
This chickpea and spinach curry is perfect!
In a large pan, sauté onions and garlic.
Add canned chickpeas, diced tomatoes, coconut milk, and your favourite curry powder.
Adjust it for kiddies.
Let it simmer for about 15 minutes and stir in fresh spinach until wilted.
Serve with naan or rice for a delicious, plant-based dinner.
6. Cheesy Chicken and Rice
This dish is like a warm hug in a bowl.
In a large pan, cook chicken pieces with rice, stock, and a mix of peas and carrots.
When the rice is done, sprinkle a generous amount of grated cheese on top and let it melt.
It’s comforting and perfect for those cosy nights.
7. Veggie-Packed Frittata
Breakfast for dinner, anyone?
A frittata is basically a giant, fluffy omelette.
Sauté your favourite veggies (think spinach, mushrooms, and tomatoes) in an oven-safe pan.
Pour in beaten eggs, and let it cook for a few minutes on the stove.
Finish it in the oven for a fluffy, golden top.
You can add salad or tortilla crisps to this dish.
Slice it up and dig in!
