This isn’t just any carrot cake recipe.
Oh no, this is the best carrot cake recipe ever!
My girls and I love making this cake and when our friends and family taste it, they wish we would open our own carrot cake bakery.
Moist (that word)
Full of flavour and topped with a dreamy cream cheese frosting that’ll have you licking the spoon (and the bowl, no judgment).
So grab your apron, crank up your favourite tunes, and let’s turn those humble carrots into a dessert masterpiece.
Trust me, one bite, and you’ll be wondering why all vegetables don’t come in cake form.

What you will need
x2 8-inch cake tins
Electric or handheld whisk
x2 Large Bowl
Serrated Knife
150g Walnuts
450ml Sunflower or Vegetable oil
6 large eggs
2 tsp of Vanilla Extract
450g of Light brown sugar
350g of grated carrots
550g of Sifted, self-raising flour
Half a tsp of salt
2 tsp of Cinnamon
2tsp of ground ginger
Zest of 1 large orange
The Icing
150g butter (softened)
150g of cream cheese
600g of sifted icing sugar
Zest of 2 large oranges
2 tsp of Vanilla Extract
Step 1 - Prepare
Grease both tins with butter using a piece of kitchen roll.
Chop 150g of Walnuts into smaller pieces.
Grate 350g of Carrots and pop them in a clean tea towel to remove excess liquid
Pop the oven on at 180c
Step 2 - Mix It
Use your large bowl and whisk. Mix together the oil, vanilla extract, eggs and sugar.
You want it to be fluffy.
Pop in the grated carrot and mix well.
Add the chopped walnuts, salt, spices, flour and orange zest. Make sure to mix well so it is all coated evenly.
Step 3 - Oven Time
Now divide the mixture evenly between the two tins.
Place in the oven for 45 minutes.
When you remove them from the oven make sure to test they are cooked through by using a skewer or fork. If it comes out clean, it is cooked.
Leave them to cool before removing the cakes from the tins.
Step 4 - Ice Ice Baby
If your cakes have a slight dome, you can cut them off now to make the cake flat to work with.
Make the icing by placing cream cheese, butter, orange zest, vanilla extract and icing sugar into a clean bowl and mix until fluffy.
Place the icing between each layer of cake or cakes if you are making more layers.
Use the rest of the icing to cover the top and sides.
